Graham Cracker Brownies

  •  4 large eggs
  • ½ cup sugar
  • 1 tsp. vanilla
  • 8 oz. good bittersweet chocolate, melted
  • ¼ cup (1/2 stick) unsalted butter, melted and cooled
  • ½ cup firmly packed dark brown sugar
  • 1 cup graham cracker crumbs

Preheat oven to 350F.  Spray 8” square pan with Pam.

Combine eggs and sugar in a mixer bowl.  Use the paddle attachment to beat the eggs for 5 minutes.  They should be very light and triple the volume.  Combine with the remaining ingredients and pour into cake pan.  Bake 35 minutes or until tester comes out clean.

You already know I’ll say accompany with whipped cream.  If not, vanilla ice cream hits the spot as well.
