Meshak's Chocolate Cake

While in Kenya I had a huge craving for chocolate cake (surprised?).  While in a remote camp on the Maasai Mara, chef Meshak made this awesome cake for me.  I intend to make it as soon as I get home.

  • 10 oz bittersweet chocolate, melted
  • 7 oz flour
  • 7 oz butter, softened
  • 10 oz sugar
  • 6 eggs
  • 1 tsp powdered ginger

Preheat oven to 350F and greased a 9” springform or loaf pan.

Mix chocolate, butter and sugar well.

Mix flour and ginger and sieve.

Separate the eggs and add yolks to the chocolate mixture.

Whip the egg whites until soft peaks.  Fold flour into the chocolate mixture and then fold in the egg whites.  Bake in a greased pan 45-50 minutes.

I love this cake with whipped cream.  You can also serve it with vanilla ice cream, slightly warmed.
