Creamy Rice Pudding

  • 4 cups cooked short or medium grain rice
  • 4 cups skim milk
  • 2/3 cup sugar
  • 1 ½ tbsp. pure vanilla extract

Combine in a pot.  Bring to a boil.  Reduce heat and simmer, uncovered, 15-20 minutes until very creamy and thickened.  Let cool.  Mixture thickens more as it cools.
