Quail or Cornish Hen

 Ingredients

 
  • 4 quail (2 pp)
  • 2 white nectarines, sliced
  • 2 red nectarines, sliced
  • Olive oil
  • Salt, pepper, cinnamon

Instructions

 

Heat up oil in a medium size skillet. Season quail with salt and pepper. Brown quail on all sides. Put in a Pyrex pan. Add nectarines (just get four, even if you can't get the white ones). Sprinkle cinnamon on top. Bake, uncovered at 450F for 20 minutes. Cover and bake for another ten minutes. Eat!

This is really simple but it's delicious and appears very sophisticated. Bake until the fruit juice thickens a little. It'll be almost burned but not quite.
