Brussels Sprouts and Steak Stir Fry

Ingredients

  • 3 tbsp oyster sauce
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1/4 cup water
  • 4 tbsp vegetable oil
  • 1 lb. Brussels sprouts, halved
  • 8 oz. flank steak. thinly sliced
  • salt
  • 3 garlic cloves, sliced
  • 2 carrots, thinly sliced
  • 10 cherry tomatoes, halved
  • 3 tbsp ginger, chopped and peeled
  • Steamed rice

Instructions

Whisk first four ingredients together. Set sauce aside.

heat 2 tbsp oil in a large skillet over medium-high heat. Add sprouts, tossing occasionally, until golden brown (5 minutes). Cover and cook until crisp-tender, about 3 minutes. Transfer to a pate and wipe the skillet clean.

Season the steak. heat 1 tbsp. oil until just beginning to smoke. Add steak in a single layer and cook until browned, about 3 minutes. Turn over and cook another minute. Add to Brussels sprouts.

Heat remaining 1 tbsp. oil. Cook garlic and ginger over medium heat until fragrant, 1 minute, and add carrots and tomatoes. Cook another 3 minutes. Add Steak and sprouts to skillet and the reserved sauce and cook, tossing occasionally, until sauce thickens (about 5 minutes). Serve with rice.
