Lucy Lu's Chicken with Pineapple Sauce

 

Ingredients

  • 1.5 lbs. chicken breasts, cubed
  • 3 tbsp soy sauce
  • 1 tbsp water
  • 3 tbsp oil
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 2 green onions
  • 1 tbsp chopped onion
  • 8 oz. chopped fresh or canned pineapple
  • Sauce:
  • 1/2 cup water
  • 2 tbsp soy sauce
  • 1/2 tsp cornstarch
  • 1 tbsp grated fresh ginger

Instructions

  1. Marinate chicken with soy, water, 1 tbsp. oil, cornstarch, sesame oil 30 minutes at room temperature.
  2. Heat wok with 2 tbsp oil. Sautee scallions and onion until golden, Ass chicken and stir fry until cooked. Add pineapple and sauce, bring to a boil and stir until thickened.
