Savta Yehudit's Stone Fruit Cake



·         7 oz sugar

·         4 eggs

·         1 1/3 cups flour (1/3 flour, 1/3 potato flour, 1/3 cornstarch)

·         1 tbsp. baking powder

·         1 cup sugar

·         10 plums or peaches or apricots


  1. Beat butter and sugar until fluffy. Add eggs one at a time. Add flour and baking powder slowly.
  2. Preheat oven to 350F. Spray a 9" round or 8" square cake pan. Pour in the batter. Cut the fruit in half and place in the batter, round-side up. Bake for 30-40 minutes or until golden brown. The dough will rise around and often oven the fruit.
