Campari Olive Oil Cake

Campari Olive Oil Cake:

¼ cup of unsalted butter, melted & more for greasing pan

2 cups of flour

1 & 2/3 cups of sugar

1 Teaspoon of fine sea salt

1 Teaspoon of baking powder

1/ Teaspoon of baking soda

 

2/3 cup of milk

2/3 cup of olive oil

3 large eggs

1/3 cup of Campari

1 Tablespoon of grapefruit zest

1 Tablespoon of orange zest

1 Teaspoon of lemon zest

¼ cup of fresh grapefruit juice

2 Tablespoons of orange juice

1 Tablespoon of lemon juice

 

Whipped Cream to garnish & serve

Heat oven to 350 degrees.  Grease 9 inch springform pan and line bottom with parchment paper (regular 9” pan works fine).

Whisk together dry ingredients.  Combine remaining ingredients and fold in dry ingredients.  Scrape batter into pan.

Bank until golden & springs back slightly.  45 to 60 minutes.

Let cool completely in pan and then unmold & plate.  Dust with powdered sugar if desired.
