Turkish Inspired Lamb Stew

Fragrant, light and delicious.


Ingredients:

2 lbs. lamb shoulder or boned leg, defatted and cubed

2 tbsp. olive oil

Salt and pepper

2 large onions, thinly sliced

6 cloves garlic, thinly sliced

¼ cup apricot preserves

2 tsp coriander

2 tsp cumin

1 tsp cinnamon

3 cups chicken stock

6 Yukon Gold potatoes, peeled and cubed


Heat the oil in a thick-bottomed pan until shimmery. Season the lamb and brown on all sides. Remove from the pan and add the onions. Cook 5 minutes until soft and somewhat brown. Add the garlic and cook for another minute. Add remaining ingredients and cook for 1 hour. Add the potatoes and cook for another hour.


Perfect with hearty red wine and crusty bread.
