Aunt Della's Thanksgiving Dressing

 

Liat shared this recipe with me from her boss during her work at the hospice.  I fell in love right away and we will be making this dressing next week for Thanksgiving.  We are cooking the turkey overnight in the oven (high risk, but we've decided to give it a try).  This dressing can be baked outside the turkey, which is important given the turkey cooking method we selected.

Ingredients:

Seven large celery stalks

Five cored but unpeeled Macintosh apples

Two large sweet onions

1 to 2 cups apple juice, depending on preferred moistness of the dressing (I use 1 ½ cups)

2 large eggs

Knob of butter

2lbs Jimmy Dean's sausage

Large loaf of bread, sliced and dried for breadcrumbs. (You can use Wonder bread but we use good crusty French bread)

1 tablespoon dried sage

Parsley, thyme, salt and white pepper to taste

 

Crumb the dried bread

Whip the eggs

Chop celery onion and apple into small bite sizes and add to the breadcrumbs.

Brown the sausage in butter and add to the breadcrumbs, crumbled. Include the butter. Add the herbs/ seasonings.

Moisten with whipped eggs and apple juice.

Mix well.

Stuff it up a Big Bird's various cavities.
