BLT POPOVERS

I am not a steak person but I love BLT. They have fabulous salads and, even better, great popovers. They are really gougeres under the guise of popovers. Here is how to make them :

2 cups milk, warmed

4 eggs

2 cups flour

1 tsp salt

1 1 / 2 cups grated Gruyere cheese

Popover pan

Place pan in oven and preheat over to 350F. Whisk eggs until frothy and gradually add the milk, whisking constantly. Sift flour and salt. Slowly add dry mixture to the liquid and combine until mostly smooth.

Remove popover pan from oven and spray with Pam. Fill each popover cup 2/3rd and top with 2 heaped tbsp. of grated cheese.

Bake 50 minutes, rotating plan half a turn after 15 minutes. Remove from oven, remove from pan and serve immediately.
